Miso has been an indispensable part of the cooking culture in Japan. As jars in your fridge go, miso has great versatility and longevity. (it can keep up for a year.) Miso can add complex flavors depends on what are you cooking. It can be sort of sweet. It can be sort of savory.

It's filled with umami. Frankly, it can improve any kind of dish.

But here few options if you are unsure what to make with miso.

1. Miso soup

Classic, rustic, warming. It's easy and quick to create, with few mistakes. Despite the traditional recipes shown below, miso can add a deeper flavor to any kind of soup you are making.

So let's be creative!

Material: For 1 serve

Dashi 150ml (soup stock)
1 tbsp miso

1 tbsp tofu
1 tbsp wakame seaweed

Step 1
Put your favorite vegetables in the soup stock, and when the vegetables are tender, add tofu and wakame seaweed and turn off the heat just before boiling.

Step 2
Melt the miso little by little.
If you are worried about the grain of Jiuqu, please rub it on the net.

When the miso melts, it's done.

Tips

Miso enzymes are sensitive to heat for a long time, so it is recommended to mix the miso after boiling the dashi stock.

2. Marinated Steak/Fillet

Miso, with its distinctive flavor, makes a tremendous marinade for steaks and fish fillets. Broil, grill, pan-sear, oven-bake, etc. You can cook them any way you want, they would still work with miso-marinating!

 

Ingredients:

Meat or fillet 500gr

Mixed miso paste

1.5 tbsp miso

1 .5tbsp honey

1 tbsp red or white wine

1 tbsp soy sauce

Grated garlic

Step 1

In a small bowl, add all the mixed miso paste ingredients and mix well.

Step 2 

Place meat and fillet in a sealable plastic bag. Add miso paste, mix well and seal. Marinated for at least 2 hours or overnight.

Step 3

Lightly rinse the miso off and cook. (low heat cooking is recommended.)

3. Miso Mayo

For mayo lovers out there, this is perhaps a way to make your mayo a little bit healthier and tastier!

 Ingredients:

(for 100g of mayo)

  1tsp miso paste

  100g mayo

  1tsp fresh lemon juice

  1tsp chili powder (optional)

Step 1

Strain the miso to make it smooth

Step 2​

Simply mix all ingredients thoroughly.

4. Miso Dressing

This fresh and simple miso dressing recipe is packed with flavor! Use it as a miso salad dressing or for drizzling bowl meals or even as a dipping sauce for veggies.

 Ingredients

(for half a cup of dressing)

  3tbsp miso

  2tbsp sesame oil

  1tbsp vinegar

  1tbsp orange juice

  1/2 tbsp soy sauce

  1/2 tbsp honey

  1/2 finely chopped ginger (optional)

Step 1

In a small bowl, whisk together all ingredients until a creamy dressing forms. Store refrigerated up to 1 month.
